My 128GB MacBook Air Core 2 Duo (2010, i.e., I've kept it for ages) runs fine even patched for Big Sur. macOS updates are "delta" files (only what's changed gets pushed), but even a full installer is "only" about 12GB. A fresh Monterey install takes up about 20GB on my 128GB 2015 11" 128GB. For your use case, it sounds like 256GB would be plenty.
